Ingredienti

  • olive oil 2 tbsp
  • cinnamon stick 1
  • bay leaves 2
  • red onion 1 large, ½ finely chopped, ½ thinly sliced
  • celery 2 sticks, finely diced
  • green pepper 1, finely diced
  • garlic 3 cloves, finely sliced
  • limes 2, ½ juiced, rest cut into wedges
  • chopped tomatoes 400g tin
  • smoked paprika 1 tsp, (use hot or sweet depending on your taste)
  • cumin seeds 1 tsp, toasted and ground
  • chipotle chilli paste 2-3 tsp
  • black beans 2 x 400g tins, rinsed and drained
  • soured cream to serve
  • coriander a small bunch, roughly chopped
  • soft corn tortillas to serve
  • chilli sauce (jalapeño or habanero are good), to serve
